Biography

Professor Michael Lokuruka is an Associate Professor of Food Science and the Director of Research, Innovation and Extension at Karatina University, Kenya. He obtained his Bachelor of Science Degree in Food Science and Technology, University of Nairobi (Kenya), a Postgraduate Diploma in Fishing and Fish Processing Technology, Technical University of Norway (NTH)/University of Trondheim (Norway), a Master of Science in Food Science, University of Reading (UK), a Postgraduate Certificate in Food Technology, Hebrew University of Jerusalem (Israel), and was awarded his Ph.D. in Food Science (with a focus on Fish Handling and Toxicology-Scombrotoxicity), from Cornell University (USA). Prof. Lokuruka spent over 10 years in the Food Industry with 8 of those in Kenya and two (2) in Canada (Guelph area in the Province of Ontario). He has taught Food Science and done Food Research at University level for over 30 years at University of Reading (U.K as a Commonwealth Scholar), Cornell University (as a SeaGrant Fellow and Scholar), Karatina University and Egerton University (Kenya) and University of Trondheim (Norway). He is extensively published with 45 peer-reviewed journal articles, 2 book chapters and 2 University level books in Food Science. He is currently co-writing his 3rd book. He was on the Editorial Board of the African Journal of Food, Agriculture, Nutrition and Development (2015-2022) and is a Technical reviewer for the same Journal (2009-current). He is an Academic Editor for the European Journal of Nutrition and Food Safety and the Founding Editor and Editor-in-Chief of the Journal of Food and Nutritional Science Research. His research interests are in Fish/Food Handling, Processing and Safety; food and Culture; Food and Nutrition Security; Food, Nutrition in Heath and Disease; Food Legislation, Standards and Policy. He has collaborated with colleagues in food postharvest loss research, food anthropology, food and culture; food and fisheries production and development with colleagues from University of Kessel and Humboldt in Germany, Makerere (Uganda), Ambe (Ethiopia), Western Michigan University, University of Michigan (Ann Arbor), and Cornell University (all in the USA), Egerton, Karatina and University of Nairobi (Kenya). He has served in over 10 conference committees and made 16 scholarly presentations in International (2 of them in 2 World Conferences on the Blue Economy) and local conferences. He has won grants as Principal Investigator (PI) from NACOSTI (Kenya), the National Fisheries Service and the National Science Foundation (USA), EUREKA Globalstars (Belgium) and the European Commission. He has been on Boards of 5 High Schools in Kenya, the Board of the Kenya Industrial Research and Development Institute (KIRDI) (Kenya) for 3 years, on the Council the Kenya School of Government for 6 years and was a Commissioner at the Public Service Commission of Kenya for 6 years. He is currently the Chairman of the Loima Technical and Vocational College in Turkana County; an Alternate Member at the Kenya Bureau of Standards on the National Codex Coordinating Committee and a Co-opted Member in the Human Resource Committee of the Kenya School of Government Council. He consults for the Fisheries/Food Industry in Kenya, and County Governments on Fisheries, Food Production and Processing, Huma Resource Management and Development, Strategic Planning and Development Issues.
